Restaurant obsessives want to know what's new, what's hot, which favorite chef just launched a sophomore effort, what Michael White is up to these days. And while the Eater 38 is a crucial resource covering old standbys and neighborhood essentials across the city, it is not a chronicle of the "it" places of the moment. Thus, we offer the Eater Heatmap, which will change continually to always highlight where the foodie crowds are flocking to at the moment.

Bâtard is the new fine dining restaurant in the old Corton/Montrachet space from legendary restaurateur Drew Nieporent. The menu from Markus Glocker includes octopus “pastrami,” pea soup with sweetbreads, black olive tortellini, rabbit with “flavors of bouillabaisse,” and veal tenderloin “tramezzini.” Former Daniel maitre d' John Winterman is a partner here, and he's running the floor. Guests can choose two courses for $55, three courses for $65, or four courses for $75. This is the restaurant that all the critics and fine dining lovers will be checking out this summer. Last month, the team from Lafayette, The Dutch, and Locanda Verde opened this casual pasta house in the old Peels space. Andrew Carmellini and chef/partner Sal Lamboglia are serving a menu of rustic house-made pastas and daily specials, like veal tails with polenta, and hanger steak with salsa verde. After 100 years in business, Russ & Daughters recently expanded to a stylish sit-down cafe around the corner from the original shop. At the cafe, you can feast on the smoked fish, pickled herring, and caviar that the store is known for, and sample new items like whitefish toast with wasabi-infused fish roe, and pastrami-cured salmon on a pretzel roll. In May, Paul Salmon opened a spinoff of his popular Jamaican restaurant Miss Lily's in the old 7A space. Chef Adam Schop, formerly of Nuela, is serving some Miss Lily's standards plus new dishes like grilled mackerel with "run down sauce," and a Jamaican patty melt. The colorful interior is the work of nightlife king Serge Becker, who's on board as creative director for this project.[Krieger]

Last month, Joe Ng and Ed Schoenfeld opened this subterranean Peking duck parlor beneath Red Farm. In addition to the signature duck, guests can order new Red Farm items like shrimp-stuffed shishito peppers, oxtail dumplings, and foie gras & strawberry tarts. Beautique has a mirror-lined staircase and a spacious subterranean dining room with a big bar in one corner. Dave Pasternack, the Crudo King of New York City, recently opened this stylish Chelsea seafood restaurant with LDV Hospitality's John Meadow. Pasternack's menu has 11 crudo plates, plus antipasti, three pasta dishes, grilled fish, and a handful of meat entrees. After months of delays, Jim Caiola and David Salama opened their total revamp of the legendary Tavern on the Green space back in April. The Tiffany glass and crystal chandeliers of the old Tavern have been replaced by earth tones, dark wood, and puffy red and green banquettes. There are no white tablecloths here. The menu from chef Katy Sparks has a long list of dishes organized by both size and cooking method. Consider the duck egg, the eggplant, the roasted chicken, and the cheese plate. [Krieger]

Racines is a wine bar with a serious menu of market-driven French-inspired cuisine. At this Parisian import, chef Frédéric Duca is serving dishes like veal tartare, braised lamb shoulder, squid a la plancha, and mangalitsa pork with ramps. Bar Bolonat is the new modern Israeli restaurant from Einat Admony, the chef/owner of perennial favorites Taim and Balaboosta. Admony is serving her own idiosyncratic versions of traditional Sephardic and Ashkenazi dishes here, with a menu that includes shrimp in "Yemenite curry," kibbeh stuffed with spiced beef, steak with freekeh salad and tahini, and lamb with chickpeas and candied fennel.
