Late last week the Wall Street Journal reported that New York developers are on track to open the largest number of new hotels in decades, adding that "All told, the 44 hotels with 7,561 rooms slated to debut this year amount to an 8.5% expansion of the city's room supply...." Many of these hotels—which, by the way, are hotter than nightclubs right now—come with restaurants. Big name restaurants. With big name chefs and restaurateurs behind them. It continues a trend that began in earnest a couple of years ago when tightened credit persuaded many big guns to flee into the arms of hoteliers (Dave Chang, Danny Meyer, Ken Friedman, Scott Conant to name a few) to lessen their risk and provide some serious funding.
