Ignacio Mattos Is Opening His Fine Dining Restaurant After All

After scrapping plans for Amado Grill, the tasting menu spot is moving full steam ahead at Nine Orchard

Amado Grill, Estela chef Ignacio Mattos’s forthcoming fine dining restaurant, is set to open at the Nine Orchard Hotel in early 2024.

If you haven’t been following along, Amado Grill is the Mattos Hospitality restaurant that, over two years, was happening, then wasn’t, and now is on again.

Back in April, a representative for Mattos told Eater that the team had decided to ditch the fine dining restaurant and “recommit to the success of Corner Bar,” referring to the well-reviewed Nine Orchard property’s lobby restaurant. At the time, the Mattos Hospitality team had said it would use the former Amado space as additional Corner Bar seating, renaming the space Dining Room at Corner Bar.

During the point in which the group would have rolled out Amado Grill, Mattos Hospitality found itself amid unionization efforts from its employees from the team’s Lodi in Rockefeller Center, which was first announced in January 2023. (Mattos Hospitality has since decided to do away with the bakery portion of Lodi.)

Now moving full steam ahead with Amado, a spokesperson claims the change up was due to things at Corner Bar being “settled”; the team “realized they had the capacity to run with it’s on!”

Forecasters have been projecting Amado’s opening for several years. New York Times reported a September 2022 opening was in store. By December 2022, the Wall Street Journal went long on Amado, still not open, calling it Mattos’ first “first fine dining restaurant” (though one might argue Mattos’ most famous restaurant, Estela is also fine dining). In describing Amado to the publication he said, “The idea was to create a few different universes, this one taking inspiration from Twenty Thousand Leagues Under the Sea, going into this journey underwater and having that serenity you have when you are diving, that time stops.”

Earlier this month, Amado reappeared on Resy’s openings list. The 38-seat dining room will serve a four-course tasting menu priced at $125 per person, according to a spokesperson. “After seven courses, I don’t think anything really matters any longer,” Mattos told WSJ back in 2022, lamenting how long and laborious tasting menus have gotten.

The aquatic-themed room, outfitted with plaster walls and upholstered banquettes, was designed by Fernando Santangelo and features artwork by Harold Ancart, according to its website.

When it finally opens next year, Amado Grill will be the third venue from Mattos at the Lower East Side hotel, joining Corner Bar and its cocktail bar, Swan Room. In addition, Mattos owns Lodi, Estela, and Cafe Altro Paradiso.
