After blowing up Detroit-style pizza in New York City, the Emily team will next put its attention on Rhode Island’s grilled pizza, serving that style in the old GG’s space in the East Village come November.
Emily and Matt Hyland will turn 511 East Fifth St., between Avenues A and B, into a grilled pizza haven, Grub Street reports, with a gas and charcoal hybrid grill pushing out pies such as one with Fontina, Pecorino, and a shredded cheese blend. Beyond pizza, influences will be from Italy and Portugal, and as such, there will be spaghetti chitarra with clams and bonito butter, grilled head-on shrimp, and polenta johnnycakes topped with roasted mushrooms and bitter greens.
The Hylands fell for grilled pizza in college at Roger Williams University. It’s known for being crisp on the bottom but tender inside, with some smokiness from the grill. There’s not a lot of it in NYC, which is something the Hylands are familiar with after making Detroit pizza happen here with their breakout hit Emmy Squared.
It’s been a busy year for the Hylands, who opened Emily in the West Village in spring 2017, following that up with an Emmy Squared in the East Village. This new restaurant, which does not yet have a name, will come in November. Eater has reached out to the Emily team. Stay tuned for more.
