Say Hello to Pilot, the New Floating Bar From Grand Banks Team

Seasonal restaurant phenom brothers Alex and Miles Pincus unveiled Pilot yesterday, a seafood restaurant and bar on a boat that’s a follow-up to their other floating hit, Grand Banks.

The Pincuses are lifelong sailors who spent the last year completely restoring a 1920s racing schooner for the project. They’ve added two wraparound bars with stools: a marble oyster bar towards the front of the boat, and a blue-hued beer and cocktail bar near the stern. The center of the boat is lined with rows of white folding tables.

Kerry Heffernan, who was the original chef at Eleven Madison Park, is once again joining the team, serving seafood dishes like scallop ceviche, a soft shell crab po’ boy, a lobster roll, and a watermelon salad.

Pilot is docked in Brooklyn Heights, at Pier 6 in Brooklyn Bridge Park, where it is expected to stay until October. Its arrival follows other restaurants opening decidedly in the area around the park because of its prime views. Soho House founder Nick Jones planted an outpost of Cecconi’s on Dumbo’s Water Street earlier this summer, and the Grand Army team is opening Celestine on the waterfront later this year.
