Le Turtle’s Greg Proechel is leaving the Chrystie Street restaurant to open a new project this fall. The unnamed restaurant will open inside Made, a new hotel at 44 West 29 Street set to open Labor Day Week that will include a restaurant, hotel bar, and rooftop.
Joining Proechel will be Charles Seich, a Major Food Group vet (Dirty French, Sadelle’s), who will oversee the operations in the front of house. Proechel is also bringing along Le Turtle’s sous chef Tyler Heckman.
No word yet on who will replace Proechel at Le Turtle, and what changes will inevitably occur. (Will enflamed Sasso chicken for two still be a thing?)
Before opening Le Turtle with owners Taavo Somer and Carlos Quirarte, Proechel was the sous chef at Carlos Mirarchi’s critically acclaimed Blanca in Bushwick. During his time at Le Turtle, the restaurant earned two stars from Eater’s Ryan Sutton who wrote, “Proechel is an assured cook, proficiently alternating between rustic and refined preparations.”
Reservations for the hotel start on September 5 at $379 per night. Stay tuned for more news on the opening as it becomes available.
