The Michelin-starred chef behind perpetually packed DC restaurant Rose’s Luxury is reappearing in NYC for one night only on Thursday. Chef Aaron Silverman is spending time in the kitchen at newly-minted James Beard Award winner chef Marco Canora’s East Village hit Hearth on May 18th.
Silverman does kitchen exchanges with other top chefs regularly, and earlier this year, he served some of his signature dishes at Olmsted for a one-night event. As part of the exchange, Canora also went down to Rose’s.
The DC chef’s neighborhood restaurant Rose’s Luxury has had non-stop praise since it opened in 2013 — from places on best restaurant in the country lists to James Beard Awards — and it’s still known as one of the toughest tables to get in DC.
At Hearth, Silverman will be offering six of dishes from Rose’s, including a lychee salad with pork sausage and a challah with caraway butter and honey. The regular and also critically-acclaimed Hearth menu will be offered, as well.
Reservations can be made on OpenTable or by calling 646-602-1300. Here’s a rundown of the additions from Rose’s Luxury:
Challah with caraway butter and honey
Sake and wasabi oysters with an apple granita
Lychee salad with pork Sausage, habanero, and peanuts
Vegetable salad with pomegranate and yogurt
Strawberry amatriciana with macaroni and smoked pecorino
Tecate-poached pear with smoked mascarpone, walnut brown butter crumble and camomile granita
