Rainbow Bagel Creator Splits with Partners Ahead of Opening

It’s not all sunshine and rainbows

One year and a few novelty foods ago, people were lining up for rainbow bagels outside The Bagel Store in Brooklyn. The craze was so wild in February 2016 that the shop closed its Bedford Avenue location, reopening two weeks later. While demand seems to have waned for the colorful bagels — novelty food seekers are focusing on a BK avocado bar— rainbow bagel founder Scot Rossillo is opening new shop in Park Slope. But it’s not without a little drama.

According to DNAInfo, Rossillo has split with the other owners of The Bagel Store, which includes his brother-in-law. DNA notes that the Bedford location has renamed itself The Original Bagel Store, and is selling colorful bagels with the moniker “spectrum,” since Rossillo owns the rainbow bagel trademark.

As for the Metropolitan Avenue location of The Bagel Store, it’s keeping the name and star menu item, at least until 2019 when Rossillo notes its lease is set to expire. The Park Slope location of The Bagel Store is set to open in the coming weeks at 69 Fifth Avenue. According to DNAInfo, the opening could come with the christening of a new menu item: rainbow pizza.
