With press as early as 2014 that Seamus Mullen would head up the kitchen at the 1 Hotel Brooklyn Bridge, the Tertulia chef is out at the eco-friendly hotel which opened last month. The restaurant still hasn’t opened yet.
"Seamus Mullen and SH Group [a division of Starwood Capital Group] decided to discontinue their work together on the 1 HotelBrooklyn Bridge project,” says a spokesperson. “The decision was made for reasons that have nothing to do with food or concept. SH Group continues to think very highly of Seamus and his team of talented chefs.''
According to industry sources, the search is on for a new top cook to oversee the planned farm to table concept. Mullen wasn’t available for comment.
1 Hotels launched as a Starwood spinoff that was officially announced in 2014, with a release that May announcing projects with chefs Jonathan Waxman who opened Jams with the group in 2015, Tom Colicchio who opened Beachcraft in South Beach; and Mullens at a restaurant that has yet to open.
Though most recently, Mullen opened El Colmado in Gotham Market, Tertulia is Mullen’s first solo project, having earned two stars from Sam Sifton of the New York Times back in 2011. Sifton described the scene as “ a medieval bar as interpreted by the fashion editors of New York magazine. It is Game of Thrones in J. Crew and Uniqlo,” with Mullen described as “a bearish young Vermont-raised chef with a sleeve of tattoos. . . smiling damply in the heat and smoke of his open kitchen.”
Before this, Mullen was at Boqueria in Gramercy from 2006 to 2010.
