Prova was the the third Donatella Arpaia-backed pizzeria at 184 8th Ave that didn’t make the cut. It was preceded by Heartwood, which served Peter Luger-style pizza, and Donatella, which offered traditional Neapolitan pies baked in a blinged-out oven. Prova was the one with the uni pizza that Robert Sietsema called "a memorably awful product." Most people had nice things to say about the other pies, though.
And now, Prova is actually a slice stand and a sit-down restaurant in the Grand Central Terminal space that previously housed Two Boots. The uni pizza is gone, but now commuters can get slices of Neapolitan-inspired pizzas to-go. The main dining room offers whole pies and some appetizers like meatballs and eggplant parm. In the coming weeks, pasta, sandwiches, and salads will be added to the dine-in menu. The pizza menu is below. If you happen to stop by soon, please let us know what you think.
