Cocktail Maestro Xavier Herit Teams Up with Nomo Soho Hotel

The drink-maker behind Wallflower will debut a new bar project this fall

Xavier Herit, who was the head bartender at Daniel, and co-authored Daniel Boulud Cocktails and Amuse Bouches For Him and Her before opening the West Village restaurant and cocktail bar Wallflower, has a new project. He has joined the Nomo Soho Hotel (FKA the Mondrian Soho) as beverage manager and will be changing things up, including opening a new intimate bar. "We are going to redo the whole design,'' says Herit of the bar. "It will be very cozy with a focus on craft cocktails and and I'm hiring great bartenders from around the city. We plan to have the new concept in place by the fall.''

Apart from the bar, he is shaking up Nomo Kitchen’s cocktail program and adding vintage punch bowls for brunch service. "Large groups can share from the bowls,'' he explains. Among the group cocktails offered: The Notting Hill (gin, blueberry, orgeat, lemon, vanilla, and tiki bitters) and The Nucky Thompson (bourbon, Aperol, dry vermouth and grapefruit oil). Herit is still a partner in Wallflower on West 12th Street.
