Apart from taking over the dining room at Topping Rose House in Bridgehampton and gearing up to premiere ABCV this summer, Jean-Georges Vongerichten will be opening a second beach resort restaurant in Fair Harbor on Fire Island, along with partner Phil Suarez, who owns the property and has a home in the area. Le Dock will have about 65 seats inside as well as outdoor dining, and will focus on seafood. Jean-Georges alum Josh Eden, chef at August, will make his way east to join the kitchen.
"It's on the way to the Hamptons,'' laughs Vongerichten "It's nice because it's right on the docks and we get fish fresh from the boats. "It's very casual, which is really the way to go there, and Lois [Freedman, President of JG Management] designed it and made it so beautiful.''
Suarez points out that having two Long Island projects makes sense. "We can use the same farmers at both places,'' he notes. "I've been doing so much with Jean-Georges around the world; why not do something in my own little town?"
