Maison Premiere Team Opens Sauvage, a Sunny Greenpoint Bistro

The team behind James Beard Award-winning bar Maison Premiere opened a new restaurant, Sauvage, last night in Greenpoint. The 68-seat bistro — which sits on the border of McCarren Park — has been in the works for a while now.  A little over a year ago, Eater learned that partners Joshua Boissy, Lisa Giffen, and Krystof Zizka signed a lease on the former Lokal space on Lorimer. Chef and part-owner Lisa Giffen is at the helm of Sauvage's kitchen, offering dishes like smoked squab with turnips and offal pie; squid ink garganelli with sepia ragu; and carrot carpaccio with buckwheat and carrot top gremolata. The dinner menu also offers a "for two" section with choices like pig head confit, a tomahawk steak, and artic char.

At the bar is Will Elliott, a former Maison bartender who has created a list highlighting more than 200 spirits. Cocktails include the Pastis Cobbler with ArGala Pastis, cherry, and chamomile; the Sloe Moon's Rise with framboise, lime, gin, and bitters; and the Riding Tigers with Armagnac Castarede, Pineau de Charente, and peach capurro. The bar will feature hand-chiseled ice, too.

Currently, the restaurant is open for dinner every night starting at 5:00 p.m. In the next few weeks, the crew plans to launch breakfast, lunch, and brunch service, plus a take-out window offering coffee, teas, pastries, and to-go options.
