New York diners have seen some heavy-hitting sushi restaurants opening around town this year, including Sushi Zo and Kosaka. And tonight, one of the most-anticipated sushi establishments in a long while will make its debut. In the intimate dining room of Sushi Ginza Onodera, located at 461 Fifth Avenue, chef Masaki Saito and his team will serve meals where every piece of sushi will be tailored to each individual guest. The restaurant will serve almost exclusively wild-caught fish, much of which will be imported directly from Japan. To kick things off, Saito will be serving two omakase meals with around 20 courses each, priced at $300 for the regular menu and $400 for the "premium" set (service is included with all menus). Later this summer, the restaurant will also introduce a $200 meal served at tables, along with a few more reasonably priced lunch options. Sushi Ginza Onodera also has outposts in a handful of the world's major hubs, including London and Hong Kong. A Los Angeles outpost is on the way.
