Chef Jordan Frosolone has left Sessanta as executive chef and has been replaced by Paul DiBari. Frosolone launched John McDonald's the Mercer Street Hospitality group's Sicilian and Italian coastal restaurant last year. According to a representative for the restaurant, the decision was mutual. Eater has to reached out to Frosolone for comment and will update this post accordingly.
DiBari has been with Mercer Street Hospitality for five years, having worked at Lure, Burger & Barrel, and The Bowery Meat Company, where he was executive chef. DiBari was only helping out in the Sessanta kitchen after Frosolone's departure until a replacement could be found, but his cooking convinced McDonald that he was the right man for the job. He offered him the executive chef position.
DiBari will step away from Bowery Meat Company, and chef/partner Josh Capon will oversee the kitchen until a permanent replacement is found. DiBari has rewritten the entire menu at Sessanta, moving away from the narrow focus of Frosolone and offering a broader, pan-regional vision. Check out DiBari's new menu below.
Update: Jordan Frosolone confirmed that "the decision to part ways with Sessanta was mutual and agreeable" and he wishes "chef DiBari and the team nothing but the best going forward."
