Tim And Nancy Cushman's New Hotel Restaurant Covina Opens Tonight

It will serve Mediterranean-influenced dishes, including a pizza and pasta program

Tim and Nancy Cushman will debut their new Mediterranean-influenced restaurant Covina tonight in The Park South Hotel, where they already operate their hit sushi restaurant O Ya. Menu options at Covina include hummus, a version of cacio e pepe made with shaved asparagus, roasted chicken, and lamb kofte skewers with charred garlic yogurt. Chef Tim Cushman, who was inspired by his travels to the Mediterranean coast, will also be offering a homemade pizza and pasta program, including a classic margherita pizza and farro farfalle with braised greens and parmesan.

The restaurant will open for dinner Thursday night at 5:30 p.m. at 127 East 27th St. Eventually, it will also open for lunch and brunch, with a section called Covina Café that will offer pastries, sandwiches, and Counter Culture coffee.
