Chef Johnathan Adler, an alum of Per Se and Blue Hill at Stone Bars, is leaving the kitchen of Prospect Heights staple Franny's, the restaurant confirms. Franny's sent out a letter to guests on Friday morning about the upcoming change. Adler took over for Franny's co-owner and chef Andrew Feinberg several years ago. He had never cooked pizza before starting at Franny's and ultimately stayed at the helm after Feinberg and co-owner Francine Stephens moved Franny's into a new, larger space in 2013.
Stephens says in an email that Adler will be replaced by Ian Auger and Rikki Giambruno, who have both been cooking at Franny's for years now under Adler's tutelage. They will act as co-executive chefs after Adler leaves near the end of March. "Our guests can rest assured that we will continue to serve Franny's food as we've all come to know and love," Stephens writes. Stay tuned for more information as it becomes available.
