John Fraser's Vegetarian Restaurant Nix Opens Monday [UPDATE]

The Michelin-starred chef partnered with a Chipotle founder and a Conde Nast editorial director.

Dovetail chef John Fraser's new vegetarian restaurant Nix opens for dinner tonight. Fraser, who has partnered with former Conde Nast editorial director James Truman on the project, is focusing on food cooked with a wok and a tandoor oven, including items like cacio e pepe shiitake mushroom, carrots cooked like cashew chicken, house-made naan with dips, and wood-roasted broccoli rabe with cootage cheese and Calabrian chiles. The Michelin-starred chef isn't new to the veggie-focused game. He started offering Meatless Mondays at the Upper West Side's Dovetail in 2010 and has served up dishes like carrots Wellington and a baked cauliflower at Narcissa in the East Village. Nix, at 72 University Place, also counts Chipotle founder and co-CEO Steve Ells as a partner. Stay tuned for photos of the space.
