Dan Kluger's Launching a Menu on Delivery Service Maple

It's a good preview for his new solo restaurant, Kluger says.

Former ABC Kitchen Chef Dan Kluger is next in line to release a special menu for David Chang-backed delivery service Maple. The seasonal food master who's soon opening a solo restaurant has prepped dishes like ginger-braised chicken with roasted broccoli and an Arctic char and root vegetable bowl for the service, where he serves on the advisory board.

For people eagerly anticipating his new solo project, Maple's menu is a good place to get a preview, Kluger says. He worked with the company to source seasonal and local ingredients, and the flavors on the menu fit his signature, with notes of sweet, sour, salty, and spicy in various dishes. "It's got the same roots to it," he says "That's the kind of flavor profile I go for, whether it's the Maple menu or our real menu. It's going to incorporate a lot of those same things." His new, to-be-named solo restaurant won't be open until late spring or early summer as the space at 21-23 West 8th St. undergoes construction, he says.

The Maple menu will be available from February 22 to March 4. A portion of each meal will go toward non-profit Cookies for Kids' Cancer, which raises money for pediatric cancer research. Check out the full menu below, and let us know if you try it out:
