John Fraser's new Union Square vegetarian restaurant is called Nix. The Dovetail chef is opening this new project with former Conde Nast editorial director James Truman, who gets the splashy profile treatment in this week's Times dining section. Truman helped open Narcissa, where Fraser is also the chef. Chipotle founder/co-CEO Steve Ells is also a partner in this new restaurant at 72 University Place, which is the space that briefly housed Jackson Diner.
Fraser's all-vegetarian menu will include house-made naan with dips; wood-roasted broccoli rabe with cottage cheese and Calabrian chiles; "cacio e pepe" shitake mushroom; and carrots cooked in a style reminiscent of cashew chicken. Fraser's kitchen will be equipped with a wok and a tandoor oven, and the chef will use butter and cheese, but no meat or fish stocks.
It's slated to open by the end of the month.
