Le Bilboquet Crew to Open Cafe Spinoff in Former Gene’s Coffee Shop Space Next Year

Say goodbye to Gene’s and say hello to Cafe Bilboquet

Fresh off winning the bid for a Sag Harbor outpost of Le Bilboquet, the team of Philippe Delgrange, Ron Perelman, Eric Clapton, and Steve Witkoff is about to begin construction on another New York project. The crew has taken over the former Gene's Coffee Shop at 26 East 60th Street, just up the block from their hopping restaurant, and will unveil it in January as Cafe Bilboquet. "We are opening because there is nowhere in this neighborhood for people to just sit and have a coffee, and the place became available next door,'' says Delgrange. The more relaxed spot will be open from 7 a.m. to 7 p.m., serving mostly salads, sandwiches, and home-made pastries, along with coffee, Champagne, wine, and beer. "A lot of our clients are in a hurry and don't always have time for a full lunch, so here they can have a coffee and croque monsieur, or even take something out,'' he explains. The interior will be red with tiles and chairs imported from Europe. "It is our style, but more casual,'' says Delgrange. "We want it to look likes it's been here forever.''
