Chef Panos Tsaglis, who served as sous chef at Michael Psilakis' Kefi on Columbus Avenue and as chef at Korali Estiatorio on the Upper East Side, has found a new stove at Under the Bridge, due to open at 1079 First Avenue in early February. "It will be home cooking, and light,'' vows Dimitrios Sarantopoulos, who is opening the restaurant with his partner George Kalogerakos. Apart from Greek classics, octopus will be served as saganaki, spanakopita will be prepared a la plancha with homemade phyllo dough, and lamb will be oven roasted with artichokes and herbs. Among the other house specialties are free range rooster braised in tomato with Greek egg noodles, and baked talagani cheese topped with lemon marmalade.
