Former Bobby Van's Chef Chris Miller to Head Up Kitchen at Four Cuts

A new steakhouse is coming to the Grata space near the 59th Street Bridge.

Chris Miller, who served as executive chef at Bobby Van's for 14 years and executive sous chef at Ben Benson's and Bryant Park Grill, has found a new home at Four Cuts, a steakhouse due to open in October at 1076 First Avenue. The name refers to the various 28-day dry aged meats that will be seared at 800 degrees — porterhouse, ribeye, New York strip, and filet mignon — along with Miller's array of sauces including a Borolo veal reduction. "There are not many good steakhouses on First Avenue,'' maintains the chef, who will also offer sushi grade tuna, branzino and Pacific halibut along with an array of sides from truffle fries to balsamic roasted Brussels sprouts.
