Theo Katsihtis Teams Up With Ryan Skeen for Trump Building Restaurant, Theo's

The corner space of the Trump Building at 167 East 61st St. has been taken over by 21-year-old Theo Katsihtis, who plans to open a new restaurant called Theo's, with the help of his father Peter Katsihtis, the owner of several high end coffee shops including legendary Viand on Lexington Avenue, Astro on Sixth Avenue, and Park Cafe on Seventh Avenue. The 60-seat seafood restaurant with an oyster bar is due in mid-October and will be "cozy and intimate'' according to consultant Fabrizio Khanlari, who also helped with the openings of St. Ambroeus in the Regency and Tutto Il Giorno Tribeca, among other high profile projects. The chef here is often praised but frequently moving Ryan Skeen, who did stints under Rocco DiSpirito, Daniel Boulud, Zak Pelaccio, and Jean-Georges Vongerichten before taking the reins at Allen and Delancey six years ago. Skeen was most recently working at Church Street Tavern.
