John Fraser's critical darling Dovetail will reopen on Tuesday July 7, after a brief period of renovation which included a top-to-bottom remodeling of the restaurant and kitchen. The reopening will herald a new menu concept which completely eliminates à la carte options. Instead there will be a chef's tasting menu ($135), a vegetable menu ($105) and three and four-course prix fixe menus priced at $82 and $95, respectively. Prior to remodeling. the restaurant offered a four course pre fixe for $88. À la carte options ranged in price from $22 to $26 for appetizers and $36 to $52 for mains; desserts were $14.
Dovetail opened back in 2007 and garnered three stars from the New York Times the following year and a Michelin star — which it still holds — in 2011. Fraser was ahead of the current vegetable-forward menu trend. The move away from à la carte was made because most of Dovetail's clientele chose either the prix fixe or tasting menu options, according to the chef.
