Mario Carbone, Rich Torrisi, and ex-Roberta's Baker Melissa Weller have kept the doors of the old I Tre Merli space in Soho closed shut, but inside the crew is busy getting ready for the debut of its bagel shop and restaurant Sadelle's.
The spot was slated to open this month, but the team is now hiring front of the house staff for a mid-June opening. The restaurant now also has a placeholder website, and this sweet stacked bagel logo.
There are no menus yet, but partner Jeff Zalaznick has called the project "our version of Barney Greengrass," so expect bagels with over-the-top schmears, house-cured fish, and great cocktails with the help of that liquor license. Knowing those Torrisi boys, this will be a carefully crafted bagel experience from top to bottom. In all likelihood, there will be some sort of elaborate fish-slicing theatrics, and the sharpest deli uniforms this city has ever seen.
