Bruno Now Milling Its Own 00 Pizza Flour, Hiring, and Building Bar Stools by Hand

Check out some shots of the space and its hand-crafted furniture.

Things are a bit delayed, but coming along at Bruno, the East Village pizza/tasting menu project from restaurant designer Demian Repucci and former Box Kite boys Justin Slojkowski and Dave Gulino. There's no public opening date yet, but the team is hiring staff, has its phone system hookup, and has started to mill its own 00 flour for its pizzas with that fancy mill paid for through a $30,000 Kickstarter.

An opening shouldn't be too far off. When those doors do finally open, expect pizzas like the country ham with house ricotta, mozz, Benton's country ham, and nettles; and a n'duja pie with persimmon, pickled scapes, basil and goat cheese. The tasting menu program from Slojkowski and Gulino should follow a bit after the opening, when things calm down.
