TRIBECA — Racines NY recently launched a five course tasting menu for $75. The menu changes nightly, but expect dishes like squid with preserved lemon, gnocchi, basil oil and bouillabaisse; lamb saddle with harissa, turnips, fava beans, and salsa verde; and coffee parfait with candied orange, mint, and chocolate sauce for dessert. VINEGAR HILL — John Poiarkoff of The Pines will be a guest chef tonight at Vinegar Hill House's Hillside (where his brother is the chef). He's serving a menu that the team describes as "vegetables seasoned with meat." Courses include fava beans with lamb xo, radishes, and ground ivy; mushrooms with creamed seaweed and veal sweetbreads; and lard cake to finish with strawberry and rhubarb sorbet.
