Rebelle Prepares for Its Bowery Debut With Marble Counters and Lots of Wine

The kitchen at Pearl & Ash's little sister next door will be run by Daniel Eddy from Spring in Paris.

The stripper poles have been pitched and a marble bar moved into the old R Bar space, where Patrick Cappiello, Alessandro Zampedri, and Branden McRill of Pearl & Ash are working on their latest project, Rebelle. The space is still a construction zone, but Bowery Boogie notes that the restaurant was hiring front of house staff mid-March, and an industry source whispers that all of the restaurant's wines arrived last week. A brand new sign also hangs outside, which is not actually all that different from the old R Bar sign in that it consists simply of the letter "R." Plus, from the "A" grade hanging in the window, it appears that the Health Department has already inspected, which is usually one of the last things a new restaurant has to wait on. All of this would suggest that an opening is imminent.

The kitchen will be helmed by Daniel Eddy from Spring in Paris. His menu is still under lock and key, but small French plates that pair well with wine seem like a very likely bet. A rep tells Eater that the team is tentatively planning a late April or early May opening.
