Pearl & Ash's sommelier Patrick Cappiello and general manager Branden McRill have been tight lipped about Rebelle, their new wine-focused French restaurant that's located just one door to the south. But, starting next week, New Yorkers will get to see the space for themselves. The team plans to open on Monday in the old R Bar space if final inspections go well.
Chef Daniel Eddy, an alum of the acclaimed Spring in Paris, will serve a menu of modern takes on French classics like a beet bourguignon, and a pork dish with head cheese, grape must, and mustard greens. A separate menu of more casual dishes like a torchon of foie, smoked olives, and fried pig's head will be available at the bar alongside classic cocktails like a French 75 and a sidecar. Cappiello's carefully chosen wine list is still under wraps, but if Pearl & Ash's wine program is any indication, the list will be a long one.
