It's been less than six months since the final supper at wd~50 and molecular gastronomy pioneer Wylie Dufresne is already restless. He's relaunching Alder on April 29 and doing away with the a la carte menu in the dining room, reports Grub Street. In its place, he'll serve a $65 five-course prix fixe menu of entirely new dishes. If his recent Test Kitchen Tuesdays are any indication, Dufresne and chef de cuisine Ryan Henderson will offer dishes like brie ice cream, with Triscuits, port, and pickled cherries, and Japanese squid pancakes, okonomiyaki. There will also be some new cocktails and a wine pairing for $35.
Dufresne will continue to cook some of the classics and favorites, including his burger, for an a la carte menu available exclusively at the bar and at the restaurant's new outdoor dining area. And, even though Dufresne's team is calling this a relaunch, it's should be a quick turnaround, and there's no indication that the restaurant will close or renovate before the 29th.
