Read Rambling Essays About Queso and the DOH on Javelina's Blog

The instant Tex-Mex sensation has a blog that expounds the virtues of queso and margaritas, chronicles the real estate hunt, and more.

Javelina, the most serious Tex-Mex restaurant to land in New York this year (or, let's be real, several years) is a hit right out of the gate. But the while the crowds line up for queso and frozen margaritas, Javelina is also doing its best to educate locals about the glories of Tex-Mex cuisine by way of very lengthy blog posts. Post topics range from the origins of frozen margaritas to "the state of Mexican food in NYC." Best yet, is yesterday's long post by owner and native Texan Matt Post on queso: "‘Queso?  Wait, that's just cheese right?'  — someone who doesn't know anything," he writes. "What I'm talking about is the nectar of the gods, sunshine in a bowl, the reason why we all get out of bed in the morning, that's right I'm talking about Queso."

These are not short reads or throwaway blog posts, these are full on essays, peppered with goofy memes, real-life anecdotes, quotes from Danny Meyer, and clips from the movie Boyhood. Post pulls from Eater Austin's history of Bob Armstrong dip (a variation of queso named for late Texas politician Bob Armstrong) to explain the origins of Javelina's queso, but also chronicles his search for a space and dealings with the Health Department.
