It looks like chef Koren Grieveson, the chef de cuisine at Carlos Suarez and Wade Moises's Provencal dreamboat, Claudette, has parted ways with the restaurant, a little under a year into its lifespan. A manager at the Greenwich Village restaurant tells Eater that Grieveson left the restaurant about a week ago, and that the split was a mutual decision.
This may not mean any big changes for the restaurant – after all, Moises, who's also the chef at Rosemary's, is still the executive chef. But the move itself is still big news for the restaurant. Grieveson left a position at Chicago's acclaimed Avec (where she won a James Beard Award) shortly before moving to New York, and garnered mostly praise for her work at Claudette last summer (though Pete Wells only deigned to give the restaurant one star). No word on where she'll go from here, but keep an eye out for her name.
