Tertulia chef and owner Seamus Mullen has finally opened his butcher shop and tapas bar El Colmado Butchery in the Meatpacking District. The shop, which is a partnership with Brass Monkey's Sean Cunningham, was nearly ready to open four months ago, even hosting a preview lunch, and then things went silent. In the interim, it looked like perhaps some counters had to be moved around slightly, but the team says they were waiting on ConEd. Either way, the shop is open today, says Flo Fab.
During the day, the shop will sell cuts of meat and whole rotisserie chickens to take home. There are also sandwiches, salads, and tapas for lunch and dinner. The tapas lineup is similar to the one available at El Colmado at Gotham West Market in Hell's Kitchen. Expect pan con tomate, a daily tartare, Spanish meatballs with sheep's milk yogurt, and sliced jamón Ibérico. The wine list focuses on Spanish wines with several sherries, and sangria on tap.
