Having paid homage to their mothers' recipes at their casual Soho French cafe and bakery Maman, Michelin-starred chef Armand Arnal, and his partners Benjamin Sormonte and Elisa Marshall, wanted to honor their dads with a new project. Today, they are opening Papa Poule, a takeaway-only rotisserie shop just a block west of Maman, inspired by their Sunday dinners. "Collectively, it was a tradition to eat chicken with the whole family on Sundays, prepared and cooked by our dads," says Sormonte.
The menu: Options are limited mostly to chicken which is "massaged, marinated, and stuffed," according to a release, and then sold by the quarter, half, or whole bird. A few of the sides like Israeli couscous with roasted carrots, onions, zucchini, and Brussels sprouts, sounds similar to what the team offers at Maman, but perhaps a bit different. Those looking for Maman's stellar chocolate chip cookies for dessert, however, will have to walk over to Centre Street to find them.
