Celebrity Vegan Chloe Coscarelli Plans Fast-Casual Spot with ESquared Near NYU

NYU students who are minoring in veganism for the semester will soon have a new fast-casual hangout. Cult vegan celeb Chloe Coscarelli, who holds the distinguished position of being the first vegan to ever win a TV cooking competition (she won Food Network's Cupcake Wars), is working with ESquared Hospitality (BLT restaurants, Casa Nonna, etc.) to open "by CHLOE." A release promises vegan burgers, "hand-crafted salads" (really, is there any other kind?), lots of gluten free options, cold-pressed juices, beer and wine, and a to-go window. Expect an opening sometime this spring or summer. And so continues the gradual LA-ification of New York City lunch.
