La Grenouille's legendary ex-maitre d' Charles Masson will return to the restaurant floor at his updated "brasserie de luxe," Chevalier, in about a month, when it opens at the new Baccarat hotel. Executive chef Shea Gallante, who scored a Michelin star for his cooking at Cru, is working on finalizing the menu this weekend and is hiring for a total of five kitchen positions, from steward on up to sous chef. He'll need a big staff, since he'll also be responsible for all of the hotel's food and beverage operations, including room service — though it will run separately from the restaurant. Stay tuned for dinner menu items next week, and expect breakfast and lunch to follow sometime after the opening.
