Emmy Squared will be located in a former Subway store a few doors down from the original Emily pizzeria in Clinton Hill. For this new venture, Matt and Emily Hyland are teaming up with Paulie Gee's veteran Lou Tomczak, who will be a co-chef/partner. The menu will include riffs on Detroit-style pizzas, which are typically square pies cooked in a pan, with a layer off sauce on top. In addition to a red pie, the team is working on a white pizza with caramelized onions. The menu will be rounded out by Italian sandwiches, including a cold cut combo and a chicken parm. Emily tells Grub Street: "We want to be that really awesome, high-quality pizza to go, as well as a place to get your sandwiches or drink a beer and watch the game." The new restaurant will open toward the end of winter, or the beginning of spring 2016.
