Kyle Koenig starting working for Tom Colicchio back in 2010. He acted as executive chef at Topping Rose in Bridgehampton, and remained there even after Colicchio parted ways with the venture at the beginning of the year. Midway through the summer, he left Topping Rose abruptly and Eater caught up with him at the Union Square market. He told us he was shopping for his new post, back in the Colicchio fold as chef at Craft, replacing Taylor Naples, who left this week. Koenig says he plans to bring the relationships he cultivated with Long Island farmers and fishermen to the Craft kitchen "Holly Browder will be raising chickens just for us and we will pick what they are fed,'' explains Koenig, who is also bringing in whole goats, pigs, and lambs. He plans to focus on daytime fare as well as dinner."I want to make this a great lunch destination,'' he says.
