American-born chef Daniel Rose — who operates the acclaimed fine dining establishment Spring in Paris — is moving to New York soon to helm the kitchens at Stephen Starr's new restaurants in Aby Rosen's new hotel at 138 Lafayette Street. One of the dining rooms will be an outpost of five-decade-old Parisian bistro Chez La Vieille Adrienne. As it turns out, Starr and Rose are taking over the original in Paris, and this will be its New York counterpart. The boys are also planning another, as-yet-unnamed French restaurant for the Manhattan hotel.
Rose tells the Times: "I’m inspired by the older generation, chefs like André Soltner and Alain Sailhac. You don’t see dishes like pot-au-feu much anymore." He's still the chef/owner of Spring in Paris, but he's going to be spending a lot of his time in New York getting these new projects off the ground. As you may recall, Starr recently partnered with another major international chef and NYC hotelier on the opening of The Clocktower.
The New York location of Chez La Vieille Adrienne is slated to open in spring 2016.
