Prova will soft-open tonight, ahead of the planned January 7 opening date. The high-minded Neapolitan pizzeria is a collaboration between restaurateur/TV personality Donatella Arpaia, Sushi Nakazawa partner Maurizio de Rosa and Pasquale Cozzolino and Rosario Procino of Ribalta pizza, and takes up the space that once housed Arpaia's eponymous Donatella, followed by the short-lived Heartwood. The restaurant promises to put that fancy, formerly gold-plated pizza oven to good use by making pies with "Michelin restaurant" quality ingredients like uni and quail eggs.
According to de Rosa, the full menu will be available tonight except for dessert, which is coming later this week. To make up for it there will be a black truffle pizza available as a special. Lunch, meanwhile, should launch the last week of January.
