Just ahead of the opening this evening, here she is, the full Santina menu. As promised, this is lighter fare from Mario Carbone and Rich Torrisi. What red sauce is to Carbone and ingredients of the French diaspora are to Dirty French, seafood is to Santina. It makes up a good majority of the menu, ranging from branzino crude to wild rice calamari salad to spaghetti with blue crab and lobster Catalan. Vegetarian dishes also abound, and red meat is all but non-existent. In fact – for now at least – the only red meat option promised, a T-bone steak, doesn't even make the cut. Besides the lamb tartare that comes with a cecina (chickpea flour pancake) and the polpetti Americani, which are also lamb, it's essentially all fish, vegetables, and one guajillo chicken.
No prices listed here, but expect to rack up a tab on a par with with any other Torrisi spot. Santina is open from 5 p.m. to midnight starting tonight, and will add both breakfast and lunch
