Chef Sarah Simmons's much anticipated Birds & Bubbles is set to open this Saturday, reports Grub Street. In addition to the $55 fried chicken and champagne pairing that's been on the radar, the menu includes a Jessica Simpson inspired "chicken of the sea" category with shrimp and grits and a crawfish etouffee, and a section called "the other white meat" with a buttermilk braised pork shank served with refried hominy.
