lagrillade.jpgFormer Mas (la grillade) chef, Galen Zamarra has found a new name for his restaurant: Almanac. The restaurant will take over the shuttered Grillade space this fall and serve "hyper-seasonal" food. Oh, and it's named for the personal journal he started keeping while working at Bouley in the late 1990's. According to a release: "The journal features recipes and ideas about specific ingredients; as each micro-season would pass (i.e. early summer, mid-summer, late summer), Chef Zamarra would record his ideas in a personal almanac."
