In preparation for his new restaurant at the Beekman Hotel, Tom Colicchio has been busy researching a menu to fit the historic space. He tells Grub Street: "We're revisiting old New York menus and finding dishes and modernizing them. So, that's possibly a direction that we'll go in. We're still working things out." [GS]
