Three months after Justin Smillie's departure from Il Buco Alimentari, the restaurant has signed on Barcelona native Roger Martinez to replace him. Martinez has cooked at several well-reputed restaurants in Spain, and most recently at Bouley, but it sounds like that won't translate to a more Spanish-leaning menu at Il Buco.
