Rene Redzepi, Danny Bowien, and Jeff Gordinier make a culinary pilgrimage to Mexico and stop at Erique Olvera's Pujol. The team devours a 372-day-old mole that's served with nothing but tortillas. "When I tried it the first time, I had goose bumps," says Redzepi. Menus for Olvera's forthcoming New York restaurant Cosme still aren't available, but it seems likely that mole will show up on it, even if not such an old one. [NYT]
