12chefs_table_large.jpgDining lesson of the day: Don't stand up a dinner date. Last minute cancellations at many of the country's most prestigious restaurants are costing diners up to $500 a head. In New York, the sharpest lashes are being dolled out by Brooklyn Fare at $333 a person for a cancellation less than eight days in advance. Saison's GM in San Francisco explains: "With such a small restaurant with narrow margins, a table downsizing by one person could mean the difference between just surviving or the restaurant turning a profit."
