Nick Curtin, who helmed the kitchen at Rosette and the ill-fated Compose before that, is headed to Denmark for good. Curtain made his mark in New York with Nordic-inflected dishes like his braised and roasted lamb's neck and potato pancakes, and roasted avocado. In Copenhagen, he'll work with with Michelin starred chef Torsten Vildgaard at Noma co-founder Claus Meyer's restaurant project Almanak. Carl Kristian Frederiksen who previously worked at Aamanns-Copenhagen will take his place at Rosette.
