Uma Temakeria, that fast casual spot with a Michelin starred chef coming to 14th and 7th we heard about a couple of weeks ago, will be run by All'Onda executive chef and Morimoto alum Chris Jaeckle. The spot will specialize in Latin influenced Japanese handrolls (it's a big thing in Brazil), and will also serve beer, wine, and sake. Jaeckle, who garnered those stars for Ai Fiori a while back, will be crafting five seasonal rolls for the shop, but it doesn't look like he will be leaving All'Onda to roll sushi on a daily basis. The place is positioning itself as the "Chipotle of sushi," say The Robs. Co-founder Cynthia Kueppers explains: "Uma Temakeria...aims to create mass-market consumer demand for sustainable seafood. As we expand, we hope to impel the global seafood supply chain into adopting more ocean-friendly practices." The opening is slated for early October.
